SCALLOPS SUPREME 
1/4 c. chopped onion
1/4 c. sliced mushrooms
1/4 c. chopped green pepper
3 tbsp. butter
3 tbsp. all purpose flour
1 1/4 c. milk
1/4 tsp. salt
1/4 tsp. pepper
1 1/2 lb. fresh scallops
1/4 c. dry white wine
1/4 c. shredded Swiss or mild cheese

Saute onion, mushrooms and green pepper in butter in saucepan. Stir in flour, milk, salt, pepper. Cook until thickened, stirring constantly. Add scallops, white wine, and cheese. Cook and stir over low heat for 10 minutes. Do not allow to boil.

Serve over hot rice, in patty shells, or in individual casserole dishes.

Serves 4.
