SCALLOPED POTATOES 'N FRANKS 
8 frankfurters
3 tbsp. butter
1 1/2 c. chopped onions
1/4 c. regular all purpose flour
1 1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. paprika
2 c. milk
1 c. (4 oz.) shredded Swiss cheese
2 tbsp. chopped parsley
5 c. thinly sliced baking potatoes (about 4 med.)

Set aside one frankfurter for garnish. Cut remainder into thin slices. In 2 qt. saucepan melt butter; saute onions until tender. Stir in flour, salt, pepper and paprika. Remove from heat and gradually stir in milk. Cook, stirring constantly until thickened. Cook 2 extra minutes. Remove from heat; stir in cheese and parsley until cheese is melted. If necessary return to low heat to finish melting cheese. (Do not boil.) Layer one half of potatoes in buttered 2 qt. casserole; pour on 1/2 cheese sauce. Place all sliced frankfurters over sauce; repeat with remaining potatoes and sauce. Cover and bake in 350 degree oven for 1 hour. Remove cover; slice remaining whole frankfurter and place on top. Bake uncovered 15-30 minutes or until potatoes are tender. Serves 6-8.
