COCONUT PIE 
2/3 c. sugar
1 c. canned milk, large
1 c. coconut
2 eggs
1 tsp. vanilla

Cream sugar and eggs with fork. Add milk, vanilla, and coconut. Pour into 9 inch uncooked pie shell and cook 40 minutes at 325 degrees. (Can make 2 regular pies or 1 deep dish pie.)

MERINGUE:

Beat 2 egg whites and a dash of salt until foamy. Slowly add 1/4 cup sugar, beating constantly until stiff shiny peaks form. Pile into pudding or pie. Seal edges; bake 5-10 minutes at 425 degrees until lightly brown.

If using banana pudding, you may arrange more banana slices around edge just before serving.
