EASY RANCH DRESSING CHICKEN
(SERVES 6)
 
8 deboned and skinned chicken breasts
2/3 box Ritz crackers
1 (18 oz.) bottle Ranch dressing

Soak chicken breasts in dressing overnight. Cover cookie sheet in foil wrap. Dip chicken in crushed Ritz cracker crumbs and place on cookie sheet.

Cover with foil wrap. Bake 1 hour covered and 10 minutes uncovered to make crisp at 350 degrees. Delicious.

Seasoned the chicken with salt, pepper, and a little bit of red pepper flakes before soaking in the ranch dressing. Only had time to marinate for half an hour. Baked uncovered the whole time for one hour. Both my kids loved it! Very tasty, quick and easy recipe with stuff you probably already have on hand.

Very easy, and surprisingly tasty! I'm fairly new to marinating chicken, in the past I have tried italian dressing. I wanted to try something different, and this was great. The only problem was a little sticking to the pan (I might try some pam or something next time), and it didn't come out as crispy as I would have liked. I think with a little adjustment such as cooking uncovered the entire time as the previous reviewer did may help!
