ASHLEY'S EASY PORK POT PIE
I sometimes substitute the pork with beef, turkey, or chicken. You can also add any vegetables or substitute other vegetables to make it your own!

1 lb. ground pork
1 small onion, diced (optional)
2 tbsp. butter
1 (15 oz.) can whole kernel corn, drained
1 (15 oz.) can peas, drained
5 large carrots, peeled and sliced
2 medium baking potatoes, cubed
1 cup quick-cooking rice, uncooked (I use Minute Rice)
1 (10 oz.) can cream of mushroom soup
1 (10 oz.) can cream of chicken soup
salt and pepper, to taste
water
1 can refrigerator biscuits (Pillsbury)

Sauté onions and brown the pork in butter; drain well and return to pan (a very large pan is best to mix everything up).

Add corn, peas, carrots, potatoes, rice, cream of chicken, cream of mushroom. Season with salt and pepper. Mix well. Add water, 1 tablespoon at a time, until desired thickness.

Put into a baking dish, cover with foil, and bake at 350°F for 75 to 90 minutes, or until potatoes and carrots are tender.

Add biscuits during the last 15 minutes (or however long according to the directions on the package). Let cool and enjoy!
