MEMERE'S MEAT PIES 
1 lb lean ground beef
1 lb ground pork
5 medium white potatoes, peeled and mashed
1 large onion, chopped
4 stalks of celery, chopped
1-2 palm fulls of plain breadcrumbs
2 boxes Pillsbury pie crusts
salt
pepper
olive oil

Preheat oven to 350°F.

In a large skillet, drizzle a 2 second count of olive oil and combine pork, beef, onion and celery. Brown over medium heat until meat is cooked through, stir in breadcrumbs, just enough to absorb some of the moisture. Salt and pepper to taste and set aside to cool.

Peel and chop 5 medium potatoes, boil potatoes in salted water for 10-15 minutes until tender. Drain and mash. DO NOT add butter or milk to potatoes.

Combine meat mixture with mashed potatoes. Stir until all ingredients are thoroughly combined.

Prepare two pie plates, putting an uncooked Pillsbury crust on the bottom of each. Fill each crust with the meat and potato mixture, and cover with the other portion of the crust, pinching all along the edges and removing and extra from the sides.

Bake pies in the oven for about 35-45 minutes, or until crust is flaky and brown.

This is great with a beef gravy or ketchup.

***If you want to make only one pie, you can simply cut the recipe in half, two pies is quite a bit of food***

these are a Christmas Eve and New Year's Day staple in French Canadian households. My family looks forward to meat pies each year. we also use the extra pie crust to make butter and sugar cookies, spreading butter on pie crust then sprinkling with sugar and cinnamon. Bake until browned. yummy...

Just like my Memeres used to make! They always used venison and beef but this year I'm using elk and whitetail deer venison just to put a spin on it! Thanks for sharing!
