TEXAS CHICKEN CASSEROLE 
3 c. cooked chicken (bite size pieces)
8-10 flour tortillas, cut in strips
1 onion, cut into rings
2 c. grated cheddar cheese
1 c. chicken broth
1 (10 3/4 oz.) can cream of chicken soup
1 (8 oz.) can mixed tomatoes & chilies (Ro-tel)

Heat oven to 350 degrees. Place cooked chicken in bottom of greased 9"x13" casserole; layer tortilla strips over, then onion rings and sprinkle with cheese (mix, broth, soup and Ro-tel tomatoes and pour over). Cover with foil and bake 30 to 45 minutes.
