TEXAS CHILI CASSEROLE 
1 tbsp. bacon fat
1 1/2 lbs. ground beef
1 1/2 c. chopped onion
1 c. chopped celery
1 tsp. pepper
1 (15 oz.) can chili with beans
2 c. crushed corn chips
1 c. grated sharp cheese

Preheat oven to 350 degrees. Heat the bacon fat in skillet and lightly brown the meat, onion and celery in it. Add the chili and the pepper and heat all together. Put a layer of the chili mixture, corn chips and grated cheese, ending with a sprinkle of cheese on top. Cover and bake 15 minutes. Serve with extra corn chips and a tossed green salad.
