SOUTHWESTERN CORN CASSEROLE 
1/2 cup (1 stick) butter, melted
1/2 cup chopped onion
1 small can diced green chili
1 can undrained corn
1 can creamed corn
1 pkg. Texas Style Yellow Cornbread Mix
2 eggs
1 (8 oz.) ctn. sour cream
1 cup shredded cheddar or 1 cup shredded Mexican blend

In large bowl mix all ingredients together. Pour into deep casserole dish (It will rise).

Bake at 375°F for 45 to 50 minutes (or until center springs bake at touch). Sprinkle with more cheese on top if desired.

This is also good with browned hamburger stirred in with the other ingredients.
