CREAMY CHEESY CORN CASSEROLE 
1 cup rice
1/2 cup (1 stick) butter
1 onion, chopped
1 bell pepper, chopped
2 celery sticks, chopped
2 bunches broccoli, chopped (tops only)
1 (15 oz.) can whole kernel corn, drained
1 (15 oz.) can creamed corn
1 (15 oz.) jar Cheez Whiz (or 1/2 block Velveeta cheese, cubed)

Boil 1 cup of rice until done.

In a deep pan melt butter. Finely chop vegetables and sauté for about 10 minutes. Drain rice.

In an oven or microwave safe dish mix cooked rice, vegetables, whole kernel corn, creamed corn and cheese. Mix well.

For microwave cook on high uncovered for 15-17 minutes. For oven bake uncovered for 30-35 minutes at 325°F.

Let stand for about 10 to 15 minutes then serve. I usually eat this dish with corn chips. Recipe is easily doubled but I don't double the onion. Enjoy!
