SWEET POTATO CASSEROLE 
6 lg. sweet potatoes, cooked & peeled
1 c. butter, softened
Juice of 2 oranges
Grated rind of 2 oranges
4 eggs
1/2 to 1 c. sugar

Beat sweet potatoes with electric mixer until fluffy. Add butter, orange juice and rind, eggs and sugar; beat well. Spoon mixture into a 3-quart casserole. Cover with topping. Bake at 350 degrees for 30 minutes. 8 to 10 servings.

TOPPING:

2 tbsp. butter
1 c. firmly packed brown sugar
2 tbsp. all-purpose flour
1 c. chopped pecans

Combine butter, sugar and flour in a saucepan; cook over low heat until sugar melts; stirring constantly. Add pecans.

Makes about 1 cup. cover the sweet potato casserole with this topping and bake.
