AUNT SUDIE'S SWEET POTATO
CASSEROLE
 
Sudie did her best to pin this recipe down to regular measurements for us. When asked to be more exact, she just said, "Well, I don't measure, I just throw everything in the bowl and put it in the oven! But I'll figure it out and call you back.) So here it is---

1 c. brown sugar
2 eggs
1 tsp. vanilla
Whole nutmeg, grated; allspice, cinnamon to taste
1/2 c. milk
3 c. boiled, mashed sweet potatoes
1/2 tsp. salt

Combine all ingredients in a large bowl. Use another 1/3 stick of butter to grease the pan. Pour the sweet potato mixture into the pan.

TOPPING:

1/3 stick softened butter
1 c. brown sugar
1/3 c. flour
1 c. pecans, chopped or ground in the blender

Mix all ingredients thoroughly, and sprinkle over sweet potato mixture. Bake at 350 degrees for 35 minutes or until golden brown.
