COCONUT TEA COOKIES | |
1/2 c. butter 1/2 c. oil 3 tbsp. sugar 1 tsp. vanilla 2 c. flour 1 c. shredded coconut In a bowl, combine flour and coconut. In another bowl, combine butter, oil, sugar and vanilla; beat well. Slowly blend in flour mixture. Form dough into 2 rolls. Chill overnight in refrigerator. With a greased knife, cut chilled dough into 1/4 inch thick slices. Arrange slices on lightly greased cookie sheets. Bake at 275 degrees for 35-45 minutes until lightly brown. Remove sheets to a rack. Let stand 5 minutes. Makes 4-5 dozen. |
