PUMPKIN TORTE 
24 graham crackers, crushed
1/3 c. sugar
1/2 c. butter
2 eggs, beaten
3/4 c. sugar
1 (8 oz.) cream cheese
2 c. pumpkin
3 egg yolks
1/2 c. sugar
1/2 c. milk
1/2 tsp. salt
1/2 tsp. cinnamon

Mix first 3 ingredients and put into a 9x13 inch pan. Mix the next 3 ingredients and put over crust. Bake at 350 degrees for 20 minutes. Cook remaining 6 ingredients until thick. Dissolve 1 envelope of unflavored gelatin in 1/4 cup cold water. Add the cooked mixture and cool.

When cool, fold in 3 beaten egg whites and 1/4 cup sugar. Pour onto crust. Chill and serve with whipped cream. This is a nice change from the traditional pumpkin pie.
