SLICED BAKED POTATOES 
4 med. potatoes
2 to 3 tbsp. melted butter
2 to 3 tbsp. chopped parsley (can use sage, thyme or chives instead)
4 tbsp. grated cheddar cheese
1 1/2 tbsp. Parmesan cheese

Preheat oven to 425 degrees. Peel potatoes if skin is tough. If not, scrub and rinse with skins on. Cut potatoes into thin slices most of the way through. Place potatoes in a baking dish, slightly separating slices.

Sprinkle with salt, butter and herbs. Bake for about 50 minutes. Remove from oven and sprinkle with cheese. Bake for an additional 10 to 15 minutes until lightly browned with cheese melted. Use a fork to make sure potatoes are soft inside. For 4 people.
