EGG NOG CHEESE CAKE 
CRUST:

1 1/2 c. graham cracker crumbs
6 tbsp. butter
1/4 c. sugar

1. Preheat oven to 350 degrees.

2. Place ingredients in mixing bowl and blend.

3. Press crumbs on bottom and partly up sides of greased spring form pan.

4. Bake 10 minutes in oven.

FILLING:

2 env. unflavored gelatin
1 1/4 c. eggnog
4 c. cottage cheese
3 lg. eggs, separated
1/2 c. sugar
1 c. heavy cream

1. Dissolve gelatin in 1/4 cup eggnog. Set aside.

2. Press cottage cheese through sieve. Set aside.

3. In top of double boiler, beat together egg yolks and sugar. Stir in remaining eggnog and cook gently until mixture thickens. Remove from heat and add gelatin mixture.

4. Place cottage cheese in large mixing bowl and add gelatin mixture. Blend thoroughly.

5. Beat egg whites until they form stiff peaks, then fold into cheese mixture.

6. Whip cream until stiff but not dry and fold into cheese mixture.

7. Pour mixture into prepared crust and chill for 4 hours or until set.
