CHOW MEIN 
1-2 c. cubed cooked pork or chicken
1 med. onion, sliced
2 c. diagonally sliced celery
3 tbsp. salad oil
1 (6 oz.) can sliced mushrooms (I use two 4 oz. or one 8 oz.)
1 (1 lb.) can bean sprouts, drained
2 tbsp. chopped pimento
1 (10 1/2 oz.) can condensed chicken broth soup
1/4 c. soy sauce
3 tbsp. cornstarch

If you don't have cooked meat, you may use 2 (5 oz.) cans chunk chicken in water.

In large skillet, cook and stir meat, onion and celery in oil until onion is tender. Stir in mushrooms with liquid, bean sprouts, pimento and chicken broth. Blend soy sauce and cornstarch; stir into vegetable mixture. Cook, stirring constantly until mixture thickens and boils. Simmer for about 15-20 minutes, stirring occasionally. Serve over chow mein noodles or rice.
