ROMAINE LETTUCE & ORANGE SALAD 
Romaine lettuce
1/2 c. celery
1 tbsp. dry parsley
2 green onions, chopped
11 oz. mandarin oranges, drained
1/4 c. slivered almonds

DRESSING:

1/4 c. oil
1/2 tsp. salt
Dash of pepper
2 tbsp. tarragon vinegar
1/4 tsp. Tabasco
2 tbsp. sugar

Wash and tear lettuce. Chop onions and celery over top. Top with oranges, almonds and parsley. Combine dressing ingredients. Shake well before dressing. Dress just before serving.

I served this recipe with quiche for I brunch I recently had and it was a real hit. The salad was not only easy to make, tasted great, but was really pretty (if you can call a salad pretty) with the mandarin oranges and slivered almonds on top. It was such a hit, the guests asked for a copy of the recipe and went home and made it for their husbands that same evening!
