FRUIT AND LETTUCE SALAD 
1/2 c. fresh lemon juice
2/3 c. safflower oil
2 tbsp. honey (or 2-3 packets "Equal")
1 tsp. paprika
1/2 tsp. dry mustard
1 tsp. grated lemon rind
1 clove garlic, minced
Freshly ground pepper to taste

Combine ALL dressing ingredients in a jar with a tight lid. Shake well and refrigerate.

SALAD:

2 McIntosh apples, thinly sliced
Fresh lemon juice
2 head Romaine lettuce
1 sm. head of chickory or curly endive
1 c. chopped celery
3 green onions, thinly sliced
1 c. mandarin orange segments, drained

Sprinkle apple slices with lemon juice. Wash and tear greens into bite size pieces and toss with celery and onion. Chill. Just before serving add fruit, then dressing and toss.
