FESTIVE KIWI FRUIT CHICKEN SALAD 
2 c. cubed, cooked chicken or turkey
1 (4 oz.) jar whole pimientos, sliced
1/2 c. thinly sliced celery
2 or 3 New Zealand kiwi fruit, peeled & sliced
1/2 c. white wine vinegar
Leaf lettuce
1/4 c. sugar
1/2 tsp. Dijon mustard
1/2 tsp. salt
Dash pepper
1 c. salad oil
1 kiwi fruit, peeled & cubed

Chill all ingredients before starting. In a large bowl, put chicken, pimientos, celery and kiwi fruit (2 or 3 slices). Pour dressing over and mix carefully. Serve in bowl lined with leaf lettuce or Romaine.

For dressing, put vinegar, sugar, mustard, salt and pepper in blender. Turn on high and gradually add oil. Add kiwi fruit and blend until just smooth. Chill before serving.
