CREAM OF BROCCOLI SOUP 
1/2 sm. onion, diced
1/2 sm. carrot, diced finely
1 (10 oz.) pkg. frozen broccoli chunks
1/2 c. butter
1/4 c. flour
1 qt. chicken broth
1/2 pt. whipping cream or half & half
Season to taste with salt, pepper & garlic salt

Saute the onion, carrot and frozen broccoli chunks in one stick of butter. Add the flour and cook 3 to 4 minutes. Add chicken broth, cream and seasonings. Heat thoroughly. Serves 6.
