GOULASH SOUP 
2 lg. onions, finely chopped
1 to 1 1/2 lb. beef stew meat, cubed
1 tomato, skinned
1 pkg. noodles
Paprika
1 green pepper
2-3 potatoes
Caraway seeds to taste
Salt and pepper to taste

Saute the onions in butter until translucent; off the stove, add the paprika until the onions and butter become nicely red. Add the cubed beef and cook over high heat, stirring constantly until the meat is seared. Add salt, pepper and caraway seeds. Cover, cook over low heat for 1/2 hour.

Add the green pepper, cut into 1/2 inch pieces, the tomato, and 2 cups of boiling water; cover and cook 1/2 hour. Add 2 more cups of boiling water, cover, and cook another 1/2 hour. Peel and dice the potatoes into 1/2 inch pieces and add to the soup. Cover and cook until the potatoes are done.

Prepare the noodles according to package instructions and stir into the soup. Bring the soup back to simmer and serve.
