SHRIMP AND RICE CASSEROLE 
1 med. onion, chopped
1 tsp. minced garlic
1 tbsp. canola oil
2 - 3 thinly sliced carrots
1 green pepper, cut up
1 can crushed tomatoes
3 c. chicken broth
3/4 c. long grain rice
1/2 tsp. turmeric
1 bay leaf
1 tsp. dried thyme
Pepper to taste
8 oz. shrimp, cleaned

Saute onions in oil in large pot or Dutch oven, add garlic, carrots, green pepper, rice, broth, tomatoes and spices. Bring to boil, reduce heat and cook 15 minutes or until rice is cooked. Add shrimp and cook about 3 minutes or until shrimp are cooked. Serves 4.
