ANGEL FOOD CAKE | |
1 2/3 c. egg whites 1/2 tsp. salt 1 1/2 tsp. cream of tartar 2 tsp. vanilla 1 c. sugar 1 c. plus 2 tbsp. sifted flour 3/4 c. sugar Combine egg whites, salt, cream of tartar and vanilla in large bowl. Beat until stiff, 1 1/2 to 2 minutes. Sprinkle in 1 cup sugar, beat 1 minute. Sift flour and sugar together four times. Sprinkle into egg white mixture only until mixed. Pour into ungreased 10 inch tube pan. With knife cut gently through batter to remove air bubbles. Bake at 375 degrees on lowest oven rack for 30 to 40 minutes or until crust is golden brown and cracks are dry. Immediately invert pan onto funnel or soft drink bottle; let hang until completely cool. |
