BLACK WALNUT CARROT CAKE WITH
BUTTERMILK ICING
 
2 c. sugar
1 1/2 c. Mazola oil
4 eggs
3 c. grated carrots
1 tsp. cinnamon
1 tsp. walnut flavoring
1 tsp. vanilla
2 c. self rising flour
1 c. black walnuts

Combine sugar, oil, and eggs. Add rest of ingredients. Bake 1 1/2 hours at 350 degrees. Place cookie sheet under cake pan while in oven. Tube pan, greased and floured. I use Bakers Joy.

ICING:

1/3 c. buttermilk
1 c. sugar
1/2 tsp. baking soda
1 tsp. white Karo syrup

Bring quickly to a boil and spoon over cake while still hot. Delicious!
