HALIBUT WITH ITALIAN CREAM SAUCE 
Preparation time: 10 minutes. Baking time: 20 to 25 minutes. Oven temperature: 375 degrees. Serves: 4.

4 halibut steaks (about 1 1/2 lbs.), thawed if frozen
1 tbsp. olive oil
1 tbsp. butter
1/3 c. chopped onion
1 lg. clove garlic, minced
4 sprigs parsley, chopped

SAUCE:

2 tbsp. butter
1 1/2 tbsp. all-purpose flour
1/3 c. whipping cream
3 tbsp. milk
Pinch dried oregano leaves
Salt & black pepper

1. Bring fish to room temperature. Pat dry.

2. In a large, heavy skillet, melt oil and 1 tablespoon butter. Add onion. Saute over low heat for 5 minutes.

3. Stir in garlic and parsley. Cook 5 minutes, taking care not to burn garlic.

4. Add halibut to skillet. Turn to coat both sides.

5. Bake at 375 degrees for 20 to 25 minutes until fish flakes.

6. To prepare sauce, melt butter in a small saucepan. Stir in flour. Cook a few minutes over low heat. Add cream, milk, oregano, salt and pepper. Remove from heat.

7. Spoon pan drippings and sauce over halibut. Serve immediately.

Good served with: Spaghetti tossed with butter, a green salad and crusty bread.

VARIATIONS: Try this recipe using other fleshy fish, such as swordfish, cod, haddock or fresh tuna.
