MANDY'S PUERTO RICAN RICE WITH
SPAM & CORN
 
It took me some time to get this recipe done right, it may take you a few times too. Don't get discouraged! It tastes GREAT!

2 cups long or short grain rice (I use Goya rice)
3 cups water
1 tbsp. crushed garlic
5-6 tbsp. sofrito (red), (1 big metal spoon size)
1 pkg. Sazon
1 tbsp. Adobo seasoning
1 1/2 tbsp. tomato sauce (from small can of Goya sauce)
1 (8 oz.) can corn, drained
1 (12 oz.) can spam
2 tbsp. vegetable or corn oil
1/2 tsp. salt
1 big metal spoon
1 Spanish rice pot

Heat the oil in the pot on medium high. When oil is hot add garlic, sofrito, Adobo, Sazon and tomato sauce. While that sautés, open and cut the spam into little cubes. Take the 2 cups of rice put into a bowl and rinse with water 2 times. Then add the can of corn, spam, salt and rice to the seasonings in the pot, add the water and bring to a boil. Mix and turn down to very low heat for 25-30 minutes.

Mix 1 time while cooking - if mixed to much it will come out mushy. If rice is not done just right you might want to add 1 or 2 tablespoons of water and keep it simmering.

Goes great with: salad, fried chicken, fresh bread or plantains.
