AUNT WINNIE'S ORANGE BREAD
2 large oranges, peeled
1/2 c. water
1/2 c. granulated sugar
1/2 c. butter
1/2 c. granulated sugar
2 eggs
1/2 c. milk
1 1/2 c. flour
1 tsp. baking powder
Pinch of salt

Preheat oven to 350°F.

Cut off most of the white pith off the orange peels. Cut peel very fine with knife or scissors. Cook peels in water and 1/2 cup sugar over low heat until tender and transparent, stirring constantly, as it burns easily. Set aside and cool.

Cream together the butter, rest of sugar and eggs. Beat until creamy. Stir in the milk and orange peel. Sift the flour, baking powder and salt together and add to creamed mixture and beat until fluffy. Pour into 2 (1 pound) loaf pans, or 1 large bread pan that has been greased and floured.

Bake in preheated oven until golden brown and done in center. These freeze quite well. Wonderful served warm with butter and jam of your choice.
