ZUCCHINI ORANGE NUT BREAD | |
3 eggs, beaten 1 c. cooking oil 1 1/2 c. sugar 1 3/4 c. grated zucchini 1/4 c. orange juice 2 tbsp. orange peel 1 c. chopped dates (optional) 1/2 c. raisins (optional) 1 c. broken nuts 1 tsp. vanilla 3 c. flour 1/2 tsp. salt 1/4 tsp. baking powder 1 tsp. baking soda Mix beaten eggs with oil and sugar until blended. Add zucchini, orange juice, orange peel, dates, raisins, nuts and vanilla. Mix well. Mix flour, salt, baking powder, baking soda together and add to creamed mixture. Stir until well blended. Line bottom of loaf pan with tin foil or wax paper so bread will not stick. Grease pan well. Bake at 350 degrees. 1 large loaf - 1 hour and 15 minutes. 2 small loaves - 1 hour or until toothpick comes out clean. |
