STACEY'S STRAWBERRY PIE 
4 pt. strawberries, cleaned and halved
1 c. sugar
1 c. water
3 tbsp. cornstarch
1 tbsp. butter
1 tbsp. vanilla
1 baked pie crust
1 (8 oz.) cream cheese, softened

Combine 1 cup of the ripest strawberries, sugar and 3/4 cup water. Puree. Boil in microwave.

Combine cornstarch and 1/4 cup water. Add to strawberries and boil in microwave until thick. Add butter and vanilla. Cool. Spread pie crust with cream cheese. Add strawberries and pour over with cooled sauce. Chill pie and serve with whipped cream and strawberry garnish.

Since microwave ovens vary in power, you may need to adjust your cooking time.
