COCONUT CREAM PIE 
2 c. milk
3/4 c. sugar
3 egg yolks (save whites for topping)
3 tbsp. cornstarch
1 tsp. vanilla
1/4 c. coconut

Heat together milk, sugar and egg yolks until boils. Add cornstarch and vanilla, 1/4 cup coconut in 1/4 cup cold milk to smooth mixture. Add slowly to hot milk. Pour in pie crust.

TOPPING:

Beat egg whites until foamy. Add 1/4 cup white sugar. Beat until egg whites make peaks when you pull up beaters. Sprinkle with coconut on the top. Bake at 425 degrees until brown.
