PUMPKIN ROLL 
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. pumpkin pie spice
1/2 tsp. nutmeg
1/2 tsp. salt
3 eggs, slightly beaten
1 c. sugar
2/3 c. solid pumpkin
1 c. walnuts (opt.)
Powdered sugar

CREAM CHEESE FILLING;
1 c. powdered sugar
1 (8 oz.) pkg. cream cheese
6 tbsp. butter
1 tsp. vanilla extract

Line cookie sheet with wax paper. Mix first 10 ingredients for 2 minutes. Spread thinly on cookie sheet. Bake at 375 degrees for 15 minutes. Place on a damp towel sprinkled with powdered sugar. Roll like a jelly roll. Let cool completely. Unroll, spread with filling, re-roll. Refrigerate.
