PUMPKIN ROLL 
In large bowl beat 3 eggs on high for 5 minutes. Reduce speed and add:

1 c. sugar
1 tsp. lemon juice
3/4 c. canned pumpkin

After this is mixed well, add:

3/4 c. self-rising flour
1 tsp. baking powder
1 1/2 tsp. pumpkin pie spices (or your favorite spices)
1 tsp. baking soda

Grease and flour 15 x 10 x 1 inch pan. Bake at 375 degrees 15-20 minutes. Put on towel covered with powdered sugar. Roll up and cool 30 minutes at least.

FILLING:

1 c. powdered sugar
4 tbsp. butter
8 oz. cream cheese
1/2 tsp. vanilla

Spread. Re-roll. Let set overnight. Slice and serve.
