APPLE WALNUT SUPREME CAKE 
4 c. coarsely chopped, peeled apples
1 3/4 c. sugar
2 eggs
1/2 c. Crisco oil
2 tsp. vanilla
2 c. sifted flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Combine apples and sugar; set aside. In a large mixing bowl mix eggs, oil and vanilla; then beat one minute at medium speed. Add combined ingredients alternately with apple mixture.

Stir in walnuts. Bake in a greased and floured 13 x 9 x 2 inch pan for 45 to 50 minutes until cake tests done with a toothpick. Do not overbake. May drizzle with Lemon Glaze.

LEMON GLAZE:

1 c. confectioners' sugar
1 1/2 tbsp. lemon juice
1/2 tsp. vanilla
1 tbsp. corn syrup

Blend confectioners' sugar, lemon juice, vanilla and corn syrup until smooth. Drizzle over apple walnut supreme cake if desired.
