4 c. chopped apples
2 egg
1 tsp. cinnamon
1/2 c. oil
1 c. chopped walnuts
2 c. sifted flour
2 tsp. baking soda
1 tsp. salt
2 tsp. vanilla
1 c. sugar

Combine apples, sugar and cinnamon and let stand. Beat eggs slightly; add oil and vanilla. Mix and sift flour, soda and salt; stir into egg mixture alternately with apple mix. Stir in walnuts. Pour into greased 13x9 inch cake pan. Serves 20-25 people.

ICING:

4 tbsp. butter
3 c. powdered sugar

Beat in 2 tablespoons of lemon juice and a few drops of water (1-2 tablespoons to make it spreadable).
