GRANDMA'S ORANGE CARROT CAKE 
1 c. Grandma's molasses (gold label)
1 c. butter, softened
4 eggs
1/2 c. orange juice
1 c. all-purpose flour
1 c. whole wheat flour
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2 c. shredded carrots
1/2 c. chopped walnuts

FROSTING:

3 oz. pkg. cream cheese, softened
2 tbsp. corn oil butter, softened
1 1/2 c. powdered sugar
1 tsp. grated orange peel

In large bowl, combine molasses, butter, eggs and orange juice; mix well. Stir in flour, baking soda, cinnamon and salt; mix well. Stir in carrots and walnuts. Pour into 2 greased 8 or 9-inch round cake pans. Bake in preheated 350 degree oven for 30 to 35 minutes. Cool 15 minutes; remove from pans; cool completely.

In small bowl, combine all frosting ingredients; beat until smooth. Spread on layer with frosting; top with second layer and spread with frosting. Garnish with grated orange peel or walnuts. Serves 12.

My mom made this cake for special occasions when I was growing up, and it has always been one of my favorites. Rich and spicy with a wonderful hint of orange, and the frosting is to die for! I'm so thankful that Cooks.com has this recipe in their archives, as it no longer appears on the Grandma's website. Thanks much to whomever submitted this recipe; my brothers and I have not had this cake since Mom passed away unexpectedly, and it was such a treat for us all to have it again, and to let her grandkids try it for the first time.

I first tried this recipe 32 years ago as a newlywed. I found it on the back of grandma molasses jar (gold label). Which is no longer on the back of the labels. Somewhere over the years I lost the recipe. I have searched for over 25 years trying to find it. I have tasted many carrot cakes over the years but none like "grandma's molasses orange carrot cake". This is the best carrot cake recipe ever!! Finally I can make it for my children and grandchildren. They have heard so much about it but now they can enjoy it! Thank you for having it in your Archives.
