AUNT HILDEGARD BLEEM'S CARROT
CAKE
 
2 c. whole wheat flour
2 tsp. cinnamon
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 c. shredded carrots
1 c. flaked coconut
1 c. honey
1 c. oil
4 eggs
1 c. plumped raisins

Sift dry ingredients together. Mix honey with oil in large bowl. Alternately add dry ingredients with the eggs to the honey-oil mix. Mix well after each addition. Add carrots, coconut and plumped raisins. Bake in wood range (or standard oven) at 350 degrees for about 1 hour, in 9 inch pan, with the bottom greased.
