CRUSTLESS QUICHE 
4 slices bacon (cut in small pieces)
1 lg. onion (chopped)
1 pkg. chopped frozen spinach (thawed)
8 eggs
2 c. milk
1/2 c. any grated cheese
4 sliced Swiss cheese (chopped)
1/2 c. flour
1 tsp. baking powder

Cook bacon in frying pan until almost done. Add onions and cook until limp. Add spinach and cook a minute longer. Grease 7 x 12 inch glass baking dish. Distribute spinach mixture evenly on bottom of pan.

Sprinkle Swiss cheese over spinach. Beat eggs, milk, grated cheese, flour and baking powder. Pour gently over spinach. Bake at 375 degrees for about 1 hour or until golden and knife inserted in center comes out clean.
