SAN FRANCISCO CHICKEN BREASTS 
3 or 4 chicken breasts, boned and skinned
3/4 c. dry bread crumbs
3/4 c. grated Parmesan cheese
3 tbsp. finely chopped parsley
2 tsp. salt
1/4 tsp. white pepper
12 tbsp. butter
1 clove garlic
2 lemons
Paprika

Preheat oven to 350 degrees. Split each chicken breast and pepper well.

Blend the bread crumbs, cheese, parsley and salt with a fork. Melt the butter and press the garlic into it. Simmer gently for three minutes. Dip each piece of chicken into the butter and then into the bread crumb mixture. Roll each piece up tightly and fasten with a toothpick or small skewer.

Place in a buttered baking-serving dish. Sprinkle the chicken liberally with lemon juice, the remaining butter and a dash of paprika. Bake 1 hour, basting twice.
