TURKEY SAUSAGE 
1 lb. ground turkey
1 tsp. salt
1/2 tsp. pepper
1 tsp. sage
1/2 tsp. thyme
1/4 tsp. cayenne pepper
1/2 tsp. coriander

Combine all ingredients and mix well. Refrigerate for a few hours or overnight to let the flavors mingle and develop. Shape into patties. Cook over medium heat. (High cooking temperatures make for a tough sausage.)

Since turkey has little fat, spray pan with Pam or put a small amount of oil in pan before cooking. If sausage starts to stick to pan, add a little water.
