SUGAR-FREE PINEAPPLE CARROT
COOKIES
 
3 tbsp. softened butter
1 lg. egg white
1/4 c. frozen unsweetened apple juice concentrate, thawed
1/2 c. frozen unsweetened pineapple juice concentrate, thawed
1/2 tsp. vanilla
2 c. whole wheat or white flour
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 tsp. ginger
3/4 c. drained, crushed pineapple
1 c. finely grated carrots
3/4 c. quick cooking oats
2/3 c. raisins

Cream butter with egg white; beat well. Add vanilla and juice concentrate; beat well. Combine flour, soda, cinnamon, nutmeg and ginger; add to mixture. Stir in oats, pineapple, carrots and raisins; mix until well blended. Drop by rounded teaspoon onto greased cookie sheets about 2" apart. Bake 10 to 12 minutes at 350 degrees.
