SUGAR-FREE BANANA COOKIES 
3 lg. bananas, mashed
2 c. rolled oats
1 c. chopped dates
1/3 c. oil
1 tsp. vanilla extract

Combine bananas, oats, dates, oil and vanilla. Allow to rest 15 minutes to let flavors mingle. Preheat oven to 350 degrees. Drop by teaspoonfuls onto an ungreased cookie sheet and bake for 20 minutes or until brown. Makes about 30 cookies.

TIPS: Riper bananas make sweeter cookies. Easiest way to mash bananas, a potato masher. Easiest way to chop dates, cut with kitchen shears.

I love these. They're simple and healthy and they come out great. I used steel cut oats instead of rolled oats, and just let the batter mingle a little longer (I let it set an hour). Using riper bananas is definitely an important factor. The recommended potato masher was a real help.

I used first pressed coconut oil for added flavour and added a spoon of dessicated coconut and a teaspoon of cinnamon.

The texture of mine was soft and soggy rather than chewy - more like an English bread pudding. This is the lack of sugar which would crisp it up I guess.

And YES - they do taste nice enough. When I need a sweet hit - I'm sure they'll be great.
