HAM RAREBIT 
2 c. (8 oz.) sharp cheddar cheese
1/2 c. flat beer
2 tbsp. butter
1 tsp. Worcestershire sauce
1/2 tsp. prepared mustard
1 egg, slightly beaten
12 slices cooked deli ham
4 slices rye bread, toasted
12 tomato slices
Chopped chives

Heat cheese, beer, butter, Worcestershire sauce and mustard in a double boiler; stir until smooth. Add part of sauce to beaten egg, then blend all together. Heat and stir until thickened. Place alternate slices of ham and tomato on rye toast. Top with cheese sauce. Garnish with chives. Makes 4 servings.

In a hurry use an already prepared Welsh Rarebit Sauce, canned or frozen.
