SOLE MADEIRA 
Fillet of sole (or any white fish)
Mushrooms
1/2 c. white wine
1/2 c. marsala wine
2 tbsp. lemon juice
Butter

Dip fish in flour. Heat butter; when hot put fish in pan and brown. Remove to oven.

Sauce: Add mushrooms to pan, saute. Add marsala, white wine, lemon juice. Reduce. Add butter.
