KIELBASA SKILLET SUPPER 
Salad Oil
Salt
1 small Cabbage, shredded
3 med. Potatoes (1 lb.) unpeeled and thickly sliced
1 onion, sliced
1 lb. Kielbasa or Hot dogs or Brats or.....cut into "coins"

Takes about 15 minutes to slice ingredients and about 30 minutes to cook.

Heat 3 tablespoons oil on medium heat in a 12-inch skillet, then add the potatoes, onion and 1/4 teaspoon salt; cook until golden brown. Reduce heat to low, cover and cook 5 minutes. Turn the potatoes and cook on medium until browned on the second side. Reduce heat to low, cover and cook 10 minutes until tender.

Meanwhile, heat 2 tablespoons oil in a 4 quart saucepan, then add cabbage, caraway seeds and 1/4 teaspoon of salt.

Cook until cabbage is very tender, stirring often (about 10 minutes).

When cabbage mixture is cooked tender, add meat and cook until heated through. Stir meat/cabbage mixture into potatoes.

Makes about 5 servings.
