FRESH APPLE BREAD 
1 c. white sugar
1 c. brown sugar
3 eggs
1 1/4 c. oil
3 c. diced apples
1 c. coconut
1 c. nuts
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla

Beat together sugar and oil; add eggs, slightly beaten. Add diced apples, coconut and nuts. Add flour, salt, soda and vanilla. Mix well. Bake in 2 (1 lb.) loaf pans at 325 degrees for 1 1/2 hours. May be frozen.
