APPLE RAISIN NUT BREAD 
2 eggs
1/2 c. vegetable oil
1 1/2 c. all-purpose flour
3/4 c. sugar
1 1/2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. vanilla extract
1/2 tsp. salt
1/2 tsp. baking powder
1 c. chopped walnuts
1 c. raisins
1 c. shredded fresh apples (2 med. apples)

Combine eggs, oil, flour, sugar, cinnamon, baking soda, vanilla, salt, and baking powder in large mixing bowl. Stir until well blended. Stir in nuts, raisins, and apples until a stiff batter is formed. Mix until all ingredients are thoroughly blended, but do not over-mix.

Pour into a greased 4 1/2 x 8 1/2 loaf pan. Bake at 375 degrees for 1 hour or until a tester inserted in the center comes out clean. Makes 1 loaf.
