FRESH APPLE NUT BREAD | |
1/4 c. butter, room temperature 1 c. firmly packed light brown sugar 2 eggs 3 c. unsifted flour 2 c. peeled, grated apples (about 2 lg.) 3/4 c. chopped nuts 1 1/2 tsp. baking soda 1 tsp. baking powder 1 tsp. grated lemon peel 1 tsp. salt 1 tsp. cinnamon 1/4 tsp. freshly grated nutmeg 3/4 c. buttermilk Preheat oven to 350 degrees. Grease and flour 9 x 5 inch loaf pan. Cream butter and sugar in medium bowl. Beat in eggs. Combine next 9 ingredients in separate bowl and blend into creamed mixture alternately with buttermilk. Turn into pan and bake until toothpick inserted in center comes out clean, about 1 hour. Cool 10 minutes. Remove from pan and cool completely on wire rack. Makes 1 (9 x 5 inch) loaf. |
