FRESH APPLE NUT BREAD 
1/4 c. butter, softened
1 c. packed brown sugar
2 eggs
2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1 lg. grated apple (1 1/2 c.)
1/2 c. buttermilk
3/4 c. chopped walnuts

Cream butter; add sugar, beating well at medium speed. Add eggs, one at a time, beating after each. Combine flour, baking soda, salt, cinnamon and nutmeg. Add to creamed mixture, alternately with buttermilk, ending with flour mixture. Stir in apples and walnuts.

Pour into greased and floured 9 x 5 x 3 inch pan. Bake at 350 degrees for 55-60 minutes. Cool in pan 10 minutes. Remove from pan and cool on rack. (1988 first place Illinois State Fair - Yeast & Quick Bread.)
