FRESH APPLE TEA BREAD | |
1/2 c. butter 1 c. sugar 2 eggs 1/2 tsp. grated fresh lemon rind 2 c. flour 2 tsp. baking powder 1/4 c. milk 1 tsp. vanilla 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. cinnamon 1/4 tsp. nutmeg 1/4 tsp. cloves 1 1/2 c. pared cooking apples, finely chopped 1/2 c. nuts Cream butter with sugar in large bowl. Beat in eggs. Add lemon rind. Sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves. Add 1/2 cup of dry ingredients to apples and nuts in small bowl. Stir to coat apples. Blend remaining dry ingredients into creamed mixture alternately with milk and vanilla. Stir in coated apples and nuts. Pour into greased 9 x 5 inch loaf pan. Bake at 350 degrees for 1 hour or until cake tester comes out clean. Cool on wire rack for 5 minutes then remove from pan. Cool thoroughly before slicing. |
